Leek and Mushroom Pasta

Ingredients
- 3 leeks chopped
- 1 clove garlic finely chopped
- 500g mushrooms roughly chopped
- 1 tsp oregano
- 1 tsp chilli powder
- 500g pasta
- 5 tbsp tofutti cream cheese
- 4 tsp fresh parsley chopped
- 1 tbsp olive oil
Method
- Fry leek and garlic for a few minutes
- Add mushrooms, oregano, chilli. Fry for 5 minutes
- Add pasta, cream cheese and parsley
