Leek and Mushroom Pasta

Leek pasta

Ingredients

  • 3 leeks chopped
  • 1 clove garlic finely chopped
  • 500g mushrooms roughly chopped
  • 1 tsp oregano
  • 1 tsp chilli powder
  • 500g pasta
  • 5 tbsp tofutti cream cheese
  • 4 tsp fresh parsley chopped
  • 1 tbsp olive oil

Method

  • Fry leek and garlic for a few minutes
  • Add mushrooms, oregano, chilli. Fry for 5 minutes
  • Add pasta, cream cheese and parsley
