My Spinach Soup

Ingredients
- 1 0nion chopped small
- 2 Potato diced fairly small
- 500g Spinach roughly chopped
- 2 tbsp lemon juice
- 1 litre stock (marigold vegan stock cube)
- 1 tbsp Olive oil
Method
- 1 Fry onion and potato in oil for 5 minutes
- 2 Add spinach and lemon juice
- 3 Add stock
- 4 Simmer 30 minutes
- 5 Whizz up as smooth as you like
