Tom's Vegan Cheesecake

Cheesecake

Ingredients

  • 200g vegan biscuits crumbed
  • 75g vegan marg
  • 250g tofu
  • 50g vegan marg
  • 125ml soya milk
  • grated zest 2 lemons
  • 50g brown sugar
  • vanilla flavour to taste
  • 150g fruit
  • 9in/22cm flan case

Method

  • Melt 75g marg and mix with biscuit crumbs
  • Put in dish and leave
  • Melt 50g marg
  • Whizz up tofu, marg, milk, zest, sugar, flavour
  • Put on top of base and chill
  • Decorate with fruit before serving
